Follow up clarification: It turns out category tags are indeed already able to be selected at the directory level via right-clicking to access the Dir Dat Settings menu there instead. So please ignore that part of the request (and the "Parent Directories" checkboxes in the image).
My request in that case would just be for being able to select each of the tags themselves on an individual basis. And as an addendum maybe for the tags to be filtered if they're accessed at the directory level to only showing tags that are present in that particular directory. Currently the menu presents all category tags in bulk, whether they're relevant to that directory or not. And you end up with somewhat of a mishmash of tags like both No-Intro's "Bonus" and Redump's "Bonus Discs," as well as their "Covermount" and "Coverdiscs," all intermixed with each other. Right now toggling "Add Category Sub Directories" to "On" simply blanket applies all of the tags that appear anywhere in your dats to your entire RomRoot folder structure. It would be nice to be able to select which tags you care to use and which ones you don't. Either just toggling the individual tags themselves, or even selecting on a project-by-project (parent directory) level would be extremely nice and helpful.
